My 90 Day Journey, Begins TODAY

I’m training right now to get myself ready for the ‘INSANITY’ work out series I recently purchased and will begin next week. I have gotten to a point in my life where I realize I am my BIGGEST motivator and support system, so why not push myself to achieve the healthy physique I have so long complained about NOT having? No more excuses. I am ready to know that when I put on my swim suit and go out this summer to the lake, or go tanning, that I won’t need a ‘cover up’ because I will be even PROUDER of the person I am. I am not doing this because I am insecure. I love myself, and who I am, but I know that unless I do it, no one will get in shape for me. I’d like to be able to run a 1/2 marathon someday in my life, and not use my asthma as an excuse. Please send prayers my way! There is no doubt that I will have moments of ‘ugh, why can’t I just eat some chocolate and watch TV’ or ‘I give up’ but with all my friends and family supporting me I know I can achieve this.

I plan do do the 60 day work out series, and begin running after that. In 90 (or so) days from today, I will finally achieve what I know I already can, I just need that extra push.

Loving thoughts would be much appreciated.

Life Decisions!

In recent weeks I have been researching different career paths. These are ones I have narrowed down to, so I could possibly go one of these two routes:

Baker-I truly love to be in the kitchen, but I also see this as more of a hobby, and something I can do regardless of what occupation I choose. If I go into a baking  program and I would learn many skills about pastries and cakes!

Occupational Therapist Assistant-Definately the complete opposite of a baker, but an occupational therapist assistant help their cliental find routes to a healthy lifestyle, and help with social and emotional impairments. This job reaches out to children, teens, and adults of all ages. I have wanted to become a nurse before, but I don’t think that is exactly the right place for me. With this outlet I could still help others medically, but also emotionally.

Decisions, decisions…

I am thinking hard about this because by this fall I want to have a confirmed decision where I can enroll myself into either a Baking program, or the Occupational Therapist Assistant program.

Send good vibes for me followers, so that I can choose a route good for me!

Things Are Looking Up!

It’s been basically FOREVER since I’ve written. (2 weeks to be exact)

My life has been very topsy turvy but it’s all leveled out now!

In the past two weeks I have gotten an awesome job at a “Jimmy Johns Gourmet Sandwiches” and the atmosphere of the workers is amazing! I have never worked with people who enjoy their jobs, and it changes the whole way a job can feel!

I’m still searching for other opportunities, but for now I am content.

School is going well, and I will be beginning my 3rd quarter of college in April. The summer seems so far away, but I am looking forward to the quarter off!

Everything else is going well, Seattle is not quite yet in spring mode yet, but for now I can live with the sun breaks here and there :)

Today I am auditioning for Choral Sounds Northwest–so send some luck my way bloggers!

I keep postponing my new blanket post but I promise to have it up soon!

I’ve also got a good scone recipe that you all should try, perfect for Sunday morning with your tea!

Hello, World!

This post will have to remain short because I have a class to catch soon, BUT I did want to update you all on my life!

Life is picking up for me again, I have had promising interviews and my school load has not been dragging me down!

While I was away, I did a lot of baking, and could not stop thinking of different posts to share with you all!

Here are a few:

Hiatus

I feel as though I need to write to let you know that there is a reason I will not be writing for a bit. Although I have only been blogging a week, I have to sort out and organize my life so that I can have a successful year! I plan to post in a few weeks, but in the mean time I just wanted to let everyone know that I am very excited to have followers! So please, keep following :)

Scarves and Cake Batter Pancakes

Since starting this blog three days ago, I have already made it to 107 views! I am so happy to know that people are reading!

Here is the scarf that I have been dying to show you all:

This picture was taken during the holidays so you can see the boxed up treats my mother made on the table! :)

This is a scarf I made for a great friends 13 year old daughter, and she absolutely loved it! If I were to do it again I would tweak the stitch and row count a bit but for the most part I was quite pleased!

The crochet flowers were something that I did the night before just to see if they would look cute, and they did! The fringe was another added touch that I truly loved!

I’m so glad I could finally show you all!

On the other hand, I have a funny story about last night to share.

My sister made us eggs and sausage for dinner, and for dessert what did I make?

Cake. Batter. Pancakes.

Yes, they do exist! They taste great with just a little bit of whipped cream on top, but they can also be done with a vanilla glaze.

Cake Batter Pancakes:

makes about 12 pancakes

1 1/2 cups all purpose flour

2/3 cup yellow cake mix

1 tablespoon sugar

3/4 teaspoon baking powder

pinch of salt

2 eggs

1 teaspoon vanilla extract

1-2 cups milk (If I did it again, I would use vanilla almond milk, you could do it with any milk you like)

Assorted sprinkles

Combine flour, cake mix, baking powder, sugar and salt in a bowl and mix. Add 1 cup of milk, egg and vanilla extract and stir until smooth. You want the batter to look like regular pancake batter; not too thin, not too thick. This will vary greatly on the brand of cake mix you use. Start with 1 cup of milk and add more if needed. I suggest a small taste test as well to see if the pancakes are flavored enough.

Preheat a skillet on medium heat (If you have one, I used our electric griddle set at 250 degrees, which actually worked much better than my first attempt with a skillet) Fold desired amount of sprinkles into batter. Pour batter in 1/4 cup measurements onto skillet and let cook until bubbles form on top, about 2-3 minutes. Flip and cook for 1 minute more.

Glaze:

1 cup powdered sugar

1/2 cup milk or half and half

1 teaspoon vanilla extract

Desired sprinkles

Combine all ingredients in a bowl, stir until ingredients are combined. Add more milk or powdered sugar to reach desired consistency.

Presto! Delicious breakfast for dinner courtesy of my sister, with pancakes for dessert.

Funny that I just posted about guilt free desserts–this dessert however definitely isn’t going into my diet.

Guilt Free Desserts

Are there truly any? They either taste like cardboard, have that generic chocolate or peanut butter taste, and are normally dense. Not to mention to get their label of ‘healthy’ they are packed with chemicals to reduce the calories.

I can assure you there are two ‘desserts’ I have in mind that are pure deliciousness.

I need to write a disclaimer here and let you all know that for the time being my camera is just a regular digital camera, but more commonly I use my iPhone 3Gs. The only problem about the 3Gs is that it does not have a flash, so the quality of photos are not as bright and vibrant as with some better cameras. I have been working on my mother though to allow me to take a few shots of things with a very cool camera that she was gifted during the holidays! Hopefully some better pictures will be showing up.

In the meantime, I’m sure you all can sympathize with me for not being able to hire a photographer for a little old blog.

To get started, let me just give you a bit of background on my sweet tooth. It. Runs. Wild.

If I could bake all day, I would. If I could spend my days testing new recipes, I would. The fact of the matter is, while trying to be healthy I use whole wheat flour. Whole wheat flour does not taste the same. Plain and simple. To have a truly delicious desert it must be done with all purpose or self rising flour. But who wants the gut bust after that? Bleh. I sure don’t. These are treats you can have everyday without having to sacrifice your diet, or your dignity!

I stumbled upon a great combination not too long ago, and now I will share it with you (If you have not already indulged in this yumminess)

Uh, that looks like rotten blueberries. Alas, you would be wrong. Here are all you need to whip up this amazing little treat:

  • Sweetened/Unsweetened Vanilla Almond milk, or Coconut milk.
  • Frozen blueberries
  • A sweet tooth

Here’s how you put it together:

Gather ingredients (as you can see I have used unsweetened Almond Breeze, but a similar company makes Coconut milk that is to die for!)

  • Pour blueberries (must be frozen) into desired dish and pour almond milk over blueberries.
  • Let sit for a few seconds
  • Take a spoon and gently hold the blue berries back as you tip the dish over the sink. Because they freeze together–using the almond milk as the “glue”–they do not fall over the sides as you drain the remaining almond milk from the bowl.
And here is the finished product!

What I love about this is that the blueberries freeze whatever you have poured over them, and it makes regular frozen fruit into a treat that you can enjoy at any time of day.

I have used sugar free coffee creamer (it was a little too sweet for my taste) but if you like your berries sweet, go for it!

If you enjoy more of a tart treat, buy the blueberries that are small like pebbles, not the big berries like the ones I used. The smaller they are the more tart they will taste!

I do have one more thing to show you, this however is so simple I don’t really think it needs a tutorial!

Frozen Grapes:

  • All you need is a large sized box/bag of red grapes (green ones work too, but in my experience red taste much better!) Rinse thoroughly while still in plastic packaging.
  • Pick each grape off of the vine–yes, this is tedious. But trust me, when they are frozen it’s a pain in the butt having all the icky stems attached.
  • Wash grapes thoroughly and put in a large tupperware that is freezer safe.
  • Put in freezer, and wait one to two hours. They do not reach full frozen goodness until then!

One more thing, do not forget to rinse the grapes in the plastic casing they are sold in. If you rinse them in the tupperware, the excess water will freeze as well and you will have a block of grapes instead!

I absolutely love these frozen grapes. I take a small handful, put them into a small bowl and it feels like I am eating ‘Dibs’ (you know, the ice cream bites) except these are fruity and healthy! They are perfect in the summer to cool off with as well.

The grapes are great on their own too because due to the watery insides they freeze up nice, and they become sort of like a hand held sorbet!

After doing my Yoga and Pilates today, I was CRAVING sugar. But I did myself a favor and had some grapes and a glass of water instead.

Being healthy never tasted so good!

I do not like the fact that I have said now twice I would upload the pictures of a beautiful scarf I made, but I will have to put it off one more day. My deepest apologies! College isn’t exactly the easiest thing in the world and with all the homework I had today I completely forgot! Please cut a girl some slack :)
